Lori’s Strawberry Delight

As many of you already know, Lori Brookshire’s cooking is anything but ordinary. Lori has been preparing meals for a family of five since she was in second grade, and now prepares meals at all NRS Arena events and clinics. Her experience and creativity in the kitchen leave you wanting more. While most arenas offer the typical concession menu, Lori likes to offer a variety of delicious, unique foods for our week night ropings, featuring one down home country dish each night. At our clinics, students receive six homemade from scratch meals, complete with two desserts every day. However, there is one dessert that Lori loves to make, and we love to eat. Lori’s Strawberry Delight consists of a crunchy vanilla wafer crust, cream cheese based filling, and two pounds of fresh strawberries with whipped cream to top it off.

Lori’s Strawberry Delight 
Things you will need:
– 1 bag of vanilla wafers
– 1½ cups of powdered sugar
– 1 stick of melted butter
– 8 oz. bar of cream cheese
– 1 quart of heavy cream
– 1 tsp of vanilla extract
– 2 lbs of fresh strawberries
– 1 cup of sugar
Instructions:
Crust: Mix 1 bag of crushed vanilla wafers, ½ cup of powdered sugar, 1 stick of melted butter and press it into a 9×13 pan. Bake at 350 degrees for 15 minutes.
Filling: Whip 1 quart of heavy cream into stiff peaks, add 1 cup powdered sugar, 1 tsp vanilla extract. Mix half of the heavy cream mixture with one 8 oz. bar of cream cheese, spread over crust and chill.
Top: Slice 2 lbs of fresh strawberries, cover with 1 cup of sugar. Let sit until sugar dissolves. Pour over cream cheese filling.
Top with remaining whipping cream. Keep refrigerated until ready to serve.
